Danish Microwave Meat Loaf

1 pound of ground beef (beef, not pork. Pork is fine, but too greasy for this)

1 baggie of onion soup. Not the big ones, just the ones for making onion dip. You can also use mushroom soup or leek soup.

1 small package of Philadelphia cheese or any brand of cream cheese.

1 bag of grated cheese, the flavor that you like

1 small block of regular cheese, the flavor you like, Emmenthaler is actually real nice

 

Mix the ground beef with the soup and the Philadelphia. Make small cubes of the block of cheese and mix that in too. Put it in a microwave safe dish, I use a terra cotta round, low dish. Cover with grated cheese and place in microwave. It will bubble up a bit, so make sure you have some room left under the edge.I cover it with an old plate, so the top does not dry out.

Set microwave (mine is 700) on 15 minutes. After 15 minutes, check the loaf. Be careful as it will be hot! Usually, I give it another 5 minutes. Just make sure the inside is not pink anymore.

This is nice to have with diner, but also as finger food at a picknick or pot luck. It is very easy, so kids can make it and any student with just a microwave can too.
